  • 0.25 cups Bacon (crumbled) Turkey bacon or vegetarian alternatives can be used.
  • 0.25 cups Green Onions or Chives (sliced) Substitute with herbs like parsley or dill if preferred.
  • Salt

Preparation

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, separate the egg whites from the yolks. Reserve the yolks in a separate bowl.
  • Using an electric mixer, beat the egg whites on high speed until stiff peaks form.
  • Gently fold in the Parmesan cheese, crumbled bacon, sliced chives, and season with salt and black pepper to taste.
  • Create small mounds of the mixture on the prepared baking sheet, using a spoon to shape them into clouds.
  • Make a small indentation in the center of each mound and carefully add an egg yolk to each.
  • Bake in the preheated oven for 12-15 minutes, or until the egg whites are beautifully golden and the yolks are set to your liking.
  • Remove from the oven and let cool slightly before serving.

Notes

Store leftovers in an airtight container lined with paper towels and refrigerate for up to two days. Reheat gently in the oven to maintain fluffiness.
