  • 4 slices slices of bacon Cook until crispy.
  • 4 large large eggs Can use egg substitutes for a vegan option.
  • 1 cup of milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Salt and pepper to taste
  • Butter for frying
  • 2 large large potatoes Diced for cooking.
  • Olive oil For cooking potatoes.
  • Fresh herbs (optional)

Instructions
 

Cooking Bacon

  • Cook the bacon in a skillet until crispy. Remove and drain on paper towels.

Prepare Egg Mixture

  • In a bowl, whisk together milk, eggs, vanilla, cinnamon, salt, and pepper.

Fry French Toast

  • Dip bread slices in the egg mixture, ensuring both sides are coated.
  • In the same skillet, melt some butter over medium heat and fry the soaked bread until golden brown.

Cook Potatoes

  • Meanwhile, dice the potatoes and cook them in another skillet with olive oil until crispy and tender. Season with salt, pepper, and fresh herbs if desired.

Serve

  • Serve the French toast topped with crumbled bacon, alongside scrambled eggs and crispy potatoes.

Notes

Use stale bread for the best texture. Experiment with different types of bread like brioche or challah. Don't rush cooking the bacon for the best texture. For a sweeter option, consider adding chocolate chips or sliced bananas.
