  • 2 large large eggs
  • 2 slices cooked and chopped bacon
  • 1/3 cup shredded cheddar cheese
  • 1 8-inch flour tortilla
  • 1 teaspoon butter (optional) Use for frying
  • Salt and pepper to taste For seasoning

Preparation

  • Whisk together the eggs, salt, and pepper in a small bowl.
  • In a frying pan over medium-low heat, melt the butter or spray with cooking spray.

Cooking

  • Pour in the egg mixture and cook until edges set.
  • Add half the bacon and cheese on top of the eggs. Press an 8-inch tortilla down gently over this layer.
  • Carefully flip the quesadilla to let the tortilla cook on the bottom side. Add remaining bacon and cheese on top.
  • Fold the quesadilla in half and cook until golden brown and cheese melts.
  • Cut into wedges with a pizza cutter.

Notes

Serve hot with salsa, avocado, or sour cream. Pair with fresh fruit or a smoothie for a complete meal. Store leftovers in plastic wrap or an airtight container for up to three days, or freeze for longer storage.
