  • 2 Eggs
  • 2 slices Bread (sourdough/whole)
  • 1 tablespoon White vinegar (for eggs)

Preparation

  • Toast 2 slices of bread until golden and crisp.
  • Halve and pit the avocado. Scoop into a bowl and mash with a fork. Season with salt and pepper.

Cooking

  • Bring 3 inches of water to a gentle simmer in a saucepan.
  • Add vinegar.
  • Crack each egg into a small dish.
  • Stir the water gently and slide in each egg.
  • Cook 2.5–3 minutes, then remove with a slotted spoon and drain on paper towel.

Assembly

  • Spread the mashed avocado on toast, top with poached eggs, season, and add any desired toppings.

Notes

Use day-old bread for a crispier base. Add lemon juice to the avocado to brighten flavor and prevent browning. Top with microgreens or arugula for freshness and color. Drizzle olive oil or hot honey for extra flavor.
