Main Ingredients

  • 1 piece kaiser roll (or any sturdy roll/bagel), split
  • 1 large egg
  • 1 slice American cheese (or cheddar/pepper jack/Swiss)
  • ½ piece ripe avocado, sliced or mashed
  • 1 teaspoon butter or olive oil
  • Salt
  • Black pepper

Optional Add-Ons

  • Red pepper flakes or chili crisp
  • Everything bagel seasoning
  • Lime or lemon juice
  • Hot sauce or sriracha
  • Tomato slices
  • arugula or pickled onions

Instructions
 

Preparation

  • Toast the roll by splitting it and toasting the cut-side down in a skillet until golden, about 1–2 minutes.
  • Heat a skillet over medium-low with butter or oil and crack in the egg, seasoning with salt and pepper. Cook sunny-side up for 2–3 minutes or flip for over-easy (15–30 seconds).
  • Place cheese on the egg for 30–60 seconds, covering the pan briefly to melt.
  • Slice or mash the avocado, seasoning with salt, pepper, and an optional squeeze of lime and chili flakes.
  • Assemble by placing the bottom roll, adding the egg + cheese, avocado, and topping with the top roll.
  • Add optional hot sauce or everything seasoning if desired.

Notes

Best enjoyed fresh, but leftovers can be stored separately in the refrigerator. Use lime or lemon juice to prevent avocado browning.
