  • 2 cups mashed potatoes (leftover or freshly made) Make sure they are creamy and lump-free.
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt Use unsalted for better control over seasoning.
  • 2 tablespoons butter, softened Additional butter can be used for frying.
  • as needed tablespoons additional flour for dusting

Preparation

  • Make sure your mashed potatoes are creamy and lump-free.
  • Mix the mashed potatoes with flour, baking powder, and salt until a soft dough forms.
  • Knead the dough gently on a floured surface to bring it together without overworking it.
  • Flatten the dough into a circle about ½ inch thick and cut into quarters.

Cooking

  • Heat a skillet over medium heat and add the softened butter.
  • Fry each farl for about 3-4 minutes on each side, until golden brown and crispy.
  • Keep warm until ready to serve.

Notes

Best served warm, topped with butter, or alongside eggs and bacon.
