Ingredients
  

For the mango glaze

  • 1 cup mango puree
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced

For the chicken

  • 4 pieces chicken breasts
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • optional sesame seeds and green onions for garnish

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) or heat a large skillet over medium-high heat.
  • In a bowl, mix mango puree, soy sauce, honey, minced garlic, and ginger to create the glaze.
  • Season the chicken breasts with salt and pepper.

Cooking

  • If baking, place chicken breasts on a baking sheet and brush generously with the mango glaze. Bake for 25-30 minutes or until the chicken is cooked through.
  • If skillet-searing, heat olive oil in the skillet and cook chicken for about 6-8 minutes on each side, brushing with glaze as it cooks.
  • Once done, let the chicken rest for a few minutes, then slice or serve whole.
  • Garnish with sesame seeds and chopped green onions, if desired.

Notes

For an intense flavor, use fresh ripe mangoes instead of puree. Adding sriracha or red pepper flakes to the glaze can add a spicy kick. Cooking in a cast-iron skillet helps form a great crust and enhances caramelization of the glaze.
