  • 1 pound boneless, skinless chicken breasts
  • 1 cup orange juice
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch For thickening the sauce
  • 1 tablespoon water For mixing with cornstarch

Preparation

  • In a bowl, mix orange juice, soy sauce, honey, rice vinegar, garlic, and ginger.
  • Place the chicken breasts in the crockpot and pour the orange juice mixture over the top.

Cooking

  • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through.
  • Once cooked, remove the chicken and shred it with two forks.
  • In a small bowl, mix cornstarch and water, then stir it into the crockpot. Cook on high for an additional 15 minutes to thicken the sauce.
  • Return the shredded chicken to the crockpot, mix well, and let it soak up the flavors.

Notes

For extra flavor, marinate the chicken in the orange juice mixture for a few hours or overnight before cooking. You can add vegetables like bell peppers or broccoli to the crockpot for a complete meal. Adjust the sweetness by adding more or less honey according to your taste.
