Ingredients
  

For the filling

  • 2 medium apples, peeled and diced Use varieties like Granny Smith or Honeycrisp.
  • 1 tablespoon butter For cooking the apples.
  • 2 tablespoons brown sugar Adjust according to taste.
  • 1 teaspoon ground cinnamon Add more for a spicier profile.
  • 1 teaspoon vanilla extract
  • 2 tablespoons cream cheese or vanilla yogurt Optional for added creaminess.
  • 1 teaspoon powdered sugar Optional for garnish.

Preparation

  • Peel and dice the apples into small cubes.
  • In a skillet over medium heat, melt the butter. Add apples, brown sugar, and cinnamon. Cook for 6–8 minutes until the apples are soft and coated.
  • Stir in the vanilla extract and remove from heat.
  • Lay a tortilla flat. Spoon the apple mixture on one half. Add cream cheese or yogurt if desired.
  • Fold the tortilla over to close and press lightly.
  • In a clean skillet, melt a little butter and place the folded tortilla.
  • Cook for 2–3 minutes per side until golden brown and crispy.
  • Remove, slice, and garnish with powdered sugar or a drizzle of cream. Serve warm.

Notes

These quesadillas can also be served with fresh fruit or light salad. They can be stored in the refrigerator for up to three days. Freeze individually wrapped for up to a month.
