  • 2 cups shredded cooked chicken (rotisserie works great)
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup sour cream
  • 1 sleeve buttery round crackers, crushed (about 30)
  • ½ cup unsalted butter, melted (1 stick)

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • In a large bowl, mix together the shredded chicken, cream of chicken soup, and sour cream until smooth.
  • Spread this mixture evenly into the prepared baking dish.
  • In another bowl, combine the crushed crackers with melted butter until they are well coated.
  • Sprinkle the buttery cracker mixture evenly over the chicken layer in the baking dish.

Cooking

  • Place the dish in the oven and bake for about 30–35 minutes or until the casserole is hot and bubbly with a nice golden-brown topping.
  • Once done, let the casserole cool for about 5 minutes before serving.

Notes

Serve warm from the oven, accompanied by a fresh salad or steamed vegetables. Leftovers can be reheated easily.
