Instructions :

Heat the olive oil in a large skillet over low heat. Add the onions, butter, sugar, 1 tablespoon water, salt, and pepper. Cook for about 10 minutes, stirring occasionally.
Add the balsamic vinegar and continue cooking for 25–30 minutes, until the onions are deeply golden and caramelized.
While the onions cook, roll out the pie dough to just under 1/8-inch thickness.
Cut out 12 rounds using a 3-inch cookie cutter and gently press each round into a muffin cup.
Bake the pastry shells for 10–12 minutes, until lightly golden.
Remove the shells from the tin and arrange on a platter.
